Here we are, as promised 🙂 I am going to share with you one of my favorite guilty pleasures. This time of year brings the prettiest blackberries in my garden. They are big, black, soft and delightful. And my favorite thing to do with them is make Cheesecake with Blackberry Sauce. You can use your favorite recipe for cheesecake. I personally like baked cheesecake but a no bake filling mix is just as delicious. I use this recipe. And then I top it off with Blackberry Sauce:
2 cups blackberries
1/3 cup water
1/2 cup sugar
2 tsp cornstarch
Wash the blackberries and put them in a medium sized saucepan with the 1/3 cup of water. Simmer over medium high heat. Stir the cornstarch into the sugar. Bring the blackberries to a light boil. Press the berries against the side of the pan to mash slightly. Slowly add sugar/cornstarch mixture to the berries, stirring constantly. Simmer until the sauce thickens to jam consistency (about 1 minute) Remove from heat and let cool completely.
Once your Blackberry Sauce has cooled, you can spoon it over the top of your cheesecake. Add a little bit of whipped cream if desired.
This sauce is also really good over ice cream, pancakes, cake and shortbread. Mmmmm 🙂 Also, you can substitute the fruit if you prefer. This works well with strawberries or raspberries. You could also try peaches, apricots or blueberries. Enjoy! Have a great day!
